More Holiday Baking

Here are a few more recipes of cookies that I put in our gift baskets. The famous snowball cookies, these are some of the most requested and take the most work. They are delicate but taste so good! I find they are worth it but these definitely have to be made when snackers aren’t in the house.
Snowball Cookies
2 cups all purpose flour
1 cups finely chopped almonds
(you can use pecans or walnuts)
1/4 cup of sugar
1 cup of butter
1 teaspoon vanilla
powdered sugar

Heat oven to 325°F.

Combine all ingredients except powdered sugar in bowl. Beat at low speed, scraping bowl occasionally, until well mixed.

Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake 18-25 minutes or until very lightly browned. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.

Another favorite cookie is the peanut butter with a kiss on top. My recipe is the easiest and actually gluten free.

Peanut Butter Cookies
1 cup smooth peanut butter
1 cup sugar
1 egg
1 teaspoon vanilla

Heat oven to 350°F

Combine all ingredients together until well mixed.
Shape dough into 1-inch balls. Place on ungreased cookie sheet. Bake 8 minutes then add Hershey kiss on top, place back into over for 7 more minutes or until done. Cool completely and serve. pb-kisses (11)
