My Dad and I went out for dinner years ago, instead of a salad they brought us Calcumento with our meal. I thought this is a fancy amazing salad! It was really cucumbers, tomatoes and Italian dressing. I make this all the time now, but Ill always remember them calling it that fancy name – Calcumento.

It is hands down one of the most simple sides I’ve ever made. Add onions.. Or don’t. Add olives or don’t. You can add anything to this you like but the original was simply cucumbers and tomatoes. (I like to add Parmesan cheese but I’m saving calories).
Calcumento Ingredients
2 Cucumbers
3 Roma Tomatoes
½ Cup Newman’s Lite
